Angel Hair Style Chocolate Bar
Angel Hair Style Chocolate Bar pairs the delicate sweetness of fine chocolate with the light, airy texture of spun sugar notes, creating a refined indulgence enhanced by our carefully balanced flavour ingredients.
Method
1. Melt the white chocolate and leave to one side.
2. Weigh out the sunflower seed spread into a bowl. Add the Jammy strawberry flavour and the Cream Sweet flavour. Mix in the melted white chocolate. Mix until homogenised. Add the red colour.
3. Next temper your chocolate, heat the chocolate to 42°C then cool to 29°C by stirring, then bring the mixture back up to 31°C, do not exceed 32°C. Add the Fiesta Pink colour.
4. Fill up the chocolate mould so that each cavity is filled. Pour the chocolate out to make a nice thin shell. Place the chocolate mould into the fridge to set.
5. Once the chocolate is set, take it out of the fridge. Using some food tweezers place some candy floss on the bottom of the chocolate. Then using a piping bag, pipe the strawberries and cream filling into the mould. Place into the fridge to set the filling.
6. Once the filling is set place more tempered milk chocolate on top and scrape the excess off. Then place back into the fridge to set.
7. Once the bars have set, demould them onto a work surface. Keep in an airtight container or wrap in presentation bags/foils.
